Healthy Ice Cream Recipe

If, like me, you are in the UK currently and are in the midst of a rather fabulous and unexpected heat wave, you may also be having the sudden a rather more expected craving for Ice Cream!

However, if, also like me you have just come to realise that that time of year is approaching again in which you are expected to bare more flesh than usual and you have recently been stuffing food in your face (particularly Easter Eggs) like they’re going out of style then you may be feeling that Ice Cream is one luxury you simply cannot afford right now!

And to that I say …. I HAVE THE SOLUTION TO HEALTHY ICE CREAM!

If I’m being absolutely honest, it’s not actually ice cream at all it’s Ice Fruit but that doesn’t quite have the same ring to it or make you want it quite so much, but I can assure you it has all that lovely creamy indulgent texture that makes Ice Cream so devourable (I’m keeping that as a valid word thank you very much spellcheck).

So here it is the easiest recipe you will ever encounter:

You Will Need:

Frozen Bananas (sliced and then frozen)

Any other Frozen Fruit (I used a Mango and Pineapple Smoothie Mix that I already had in the Freezer)

Food Processor

I did you not that is it!

healthy ice cream01So first things first, put take your frozen bananas out of the freezer and put them in the food processor (it’s a little kinder to the food processor if you leave you’re frozen fruit out of the freezer for around 10 minutes before whooshing it all together)

 Add in your second amount of fruit! Mango is my all time favourite fruit, if I ever find myself at a Smoothie Bar or any other ‘Drink Joint’ I will always pick the one with mango in #funfact – you are welcome!  So naturally I have gone with Mango which came in a handy smoothie mix with some Pineapple from Tesco.

healthy ice cream03Whizz whizz whizz whizz!! Be warned if you fruit is still pretty solid which it will be your food processor will bounce around all over the place so you may want to hang onto it before you end up with a broken food processor and some slowly melting fruit all over your floor.

healthy ice cream04Keep Whizzing until you have a fabulously smooth, thick and creamy looking mixture! It will be around the same consistency of soft scoop ice cream and is somewhere in between an ice cream and a sorbet.

Ingredients

  • Frozen Bananas (sliced and then frozen)
  • Any Other Frozen Fruit You Desire

Instructions

  1. Place all your frozen fruits into a food processor
  2. WHIZZ WHIZZ WHIZZZ
  3. Whiz your ingredients up until they form a smooth and creamy texture
  4. Scoop out and enjoy
